A kitchen countertop is a slab of the earth's crust, cut to fit your sink. We template it in cardboard, cut it in the yard, and carry it in whole — a single piece, because stone never forgives a seam.

The process

slab      pick the block face you'll live with
cut       water-jet or bridge saw
fit       dry-set, shim, level, seal

The choice

Granite and quartzite for heat and knives; marble if you can live with a patina; soapstone if you want a surface that never stains and never needs sealing. All three will still be there when the kitchen isn't.
