template cardboard, exact, including the sink slab pick the block face you'll live with cut water-jet or bridge saw fit dry-set, shim, level, seal
The choice
Granite and quartzite for heat and knives; marble if you can live with a patina; soapstone if you want a surface that never stains and never needs sealing. All three will still be there when the kitchen isn't.
